Today felt so deliciously like fall! It started with me sleeping right through my alarm because I was way too warm and comfortable in my
bed futon to be bothered with the gym at 5:00 AM 🙂 Yes, I am human and slack on workouts. I have to remind myself of this because I am REALLY hard on myself when I listen to my body and sleep instead of run. Once I woke up and showered, I wanted 3 things: oatmeal, to wear my new fake fur, and to drink 100 cups of my new Trader Joe’s pumpkin coffee!!! 🙂 It was heavenly, but unfortunately I only had time for 1 cup. I made the best bowl of oats I’ve ever had though (or I just hadn’t eaten oatmeal in months.) Picture & ingredients:
I nuked 1/3 rolled oats, 1/4+ cup unsweetened vanilla almond milk, and 2 egg whites then added a sliced banana, cinnamon, pumpkin pie spice, sugar-free pancake syrup, and a spoon of natural peanut butter. SO DELICIOUS & so filling! The egg whites add protein but really no taste. I sometimes add protein powder to oatmeal, but it blows up in the microwave almost every time? Anyone else have that problem?
I walk to and from work almost every day but today I was running late and decided my legs hadn’t had a break from running or walking in probably 2 months! It was going to rain today anyways, so it was good timing. For my mid-morning snack I had a pineapple Chobani with 1/4 cup plain Trader Joe’s cheerios. Simple & delicious. Lunch was one of my favorites that I’ve been bringing the last few weeks. I nuke 4 egg whites in the morning and plop the burger-shaped patty on a whole wheat sandwich thin spread with a little bit of chipotle hummus & organic mustard. It’s so quick and easy but really good!
I also have a bowl of white mushrooms and mini heirloom tomatoes with a side of chipotle hummus to dip. I generally don’t eat lunch until 3 or 4 so you’d think it would hold me over til dinner, but it never does. When I got home I had a snack of a sliced peach and a small sliced gala apple with peanut buttah. I needed some food fuel to do homework (and watch Gossip Girl.) Dinner was a salad monster of romaine, grape tomatoes, cukes, fat-free feta crumbles, 1/2 cup canned salmon, drizzled with olive oil/vinegar, whole grain dijon mustard & salt/pepper. On the side I had grilled romaine leaves & green beans sprinkled with parm cheese and pink salt. I was dying for salt tonight apparently.
Salad monsters are a staple in my huge appetite of a life. Eating a salad out of an enormous food storage container is genius because you can use the lid to shake all the ingredients & dressing around! It always feels great to eat tons of fruits & veggies after the weekend. I will leave you with one (annoying) bathroom pic of me so you can see my fabulous fur. Then it’s time to sleep so I can get my booty up for a 5 miler at 5 AM. Right after I sneak a handful of Trader Joe O’s 😉
