Hi!

Hey guys! Jeesh, cannot believe it’s been 4 months almost since I posted. I really enjoyed this summer (except not enough trips to the beach) and didn’t think about writing here often, but now that it’s my favorite season (FALL!) I’m a little more motivated to write. I am teaching Spin/Cycling again and want to get back to posting playlists, workouts, etc and just generally start blogging again. I miss you guys!

I’m not going to do a big recap of the last 4 months because we would be here all night, but I will do a few highlights.

My mom got married in July! She now lives in Rochester, NY and so we spent the weekend there. It was an absolute blast. For rehearsal dinner we were at a family member’s house and ate great food, drank a lot and laughed our asses off.

It was incredibly hot that day and the house we got ready at had no A/C (death) but somehow our hair still turned out great.

John and I just celebrated 1 year of being engaged this week!

We were upstate visiting family last weekend so to celebrate we went and got pumpkin pancakes because we are basic bitches.

My mom and stepdad and I went crazy in Target purchasing everything and anything pumpkin flavored. My favorite? Very surprising because I hate normal peeps, but these guys were amazing.

We finally set a wedding date (July 16 2016) so we are well into our plans now! It’s going well so far and only seems mildly stressful. We went to a bridal show while upstate and ate so many samples of cake we were all grossly sick. That’s the way to do it right? Have I mentioned I need to lose 15-20 pounds before my wedding? Help.

It felt very weird to be wearing a ‘bride’ name tag. I was gagging! 🙂

I started teaching Spin again. Like, a lot, again. I can never ease into anything in life… I took 4 months off and within 24 hours I had taught 3 classes. I am still teaching for 24 Hour Fitness (NYC clubs) but I also got hired at 2 new awesome places. I am teaching Sunday mornings at a small cycling studio called Simply Cycle Astoria (located in Astoria, Queens) and it is absolutely fabulous. I am also teaching for New York Sports Club now! This is huge. I have wanted to audition for them for so long. They have so many locations it’s crazy. I’ve been working for them for about 3 weeks now and I’ve already subbed 9 classes at almost all different locations. I am going to have 2 set classes starting next week but the subbing opportunities are plentiful.

Remember when I used to run a lot? Ha. I miss those days. Well, Brenda and I put off half marathon training for way too long (she like, pushed a baby out of her body and all and I was suffering from horrible anxiety for many many months) and when we started it was AWFUL. We got up to about 6 very slow miles and decided that now is just not the time to try to get in shape for a half marathon that was less than a month away. So right now my goal is running once a week. Literally. It’s the best that I can do given my spin schedule and the fact that I need to factor in sleep. Sleep is absolutely critical for me to not feel like my anxiety is drowning me (which at times it still is…) so at least a few mornings a week I have to choose sleep over getting up early for a workout. And for now, that’s okay. I’m not getting any younger so sleep in general is just an important thing to make sure I’m getting!

So, that’s what I’ve been up to in a nutshell. I am hoping to write here a few times a week (I know I know, I’ve said that a million times!) but my attitude I’ve basically had to adopt since dealing with anxiety is what happens, happens.

So Sick, So Sick Of Being Tired. And Oh So Tired Of Being Sick.

Please tell me you remember and love that my title today is from an old school Taking Back Sunday song? God, I miss being 15 and a punk rock/emo band lover. I will never stop loving them!
But on the real, I am so sick right now. I woke up Saturday morning with a pretty bad sore throat, knowing what was in store. My colds are pretty predictable and since I only get sick about twice a year these days, I’ll accept that they only last about 3 days. I worked all day Saturday and felt pretty crappy, so what better way to feel better than to eat a very large amount of pizza. I’ll go on the defensive and say the slices were about 1/3 the size of a normal piece of pizza and I got it with almost no cheese, just mostly sauce and then dumped lots of crushed red pepper, garlic powder, hot sauce and blue cheese all over it. I ate it in hopes that I would be still healthy enough on Sunday for a long run. My throat was still sore, but I set out for an incredible 10 miles, making it my longest run ever and first double digit run. It was one of the most beautiful days for a run, and I ran right along the West Side Highway running path on the water.

After stretching at the 14th Street subway stop because my train takes forever on the weekends, I made it home to foam roll, stretch, and strap on my compression sleeves for the rest of the day. I refueled with a ridiculously amazing bowl of pumpkin egg white oatmeal, with every topping I had in my kitchen pretty much.

 

Toppings: sugar free syrup, sprinkle of sea salt, raspberry preserves, coconut butter, coconut oil peanut butter, vanilla almond butter, cinnamon.

Eventually I forced myself out of bed and went to Central Park with Brenda, Dante and some other friends to relax and eat a whole bunch of junk. Chocolate covered raisins, pumpkin chips (AMAZING), guacamole chips, and all sorts of food that doesn’t create a real meal. It was awesome.

Once we parted ways, I had to get groceries but walked around for a few miles first. I ended up at 16 Handles all alone (it’s usually me and Brenda’s sunday ritual) and had a little date with myself. I busted out this Better’n Peanut Butter that I haven’t bought in forever. I don’t buy it as a sub for peanut butter because healthy fats do NOT scare this girl, but this stuff is amazing in it’s own way. Even more amazing on a cup of salted caramel froyo with crushed butterfinger and cinnamon toast crunch.

I won’t lie that some people in the room were probably judging that I was adding my own topping.

Good thing I don’t care. 🙂

I literally didn’t eat a real meal all day sunday besides that bowl of oatmeal. Sometimes it’s just fun to not care!

My cold was awful by yesterday and I just barely managed to finish the day out at work. Colds make me starrrrrving and coupled with the day after a long run, I knew I needed something large to eat. Enter: pumpkin protein cookie cake with banana “ice cream” for dinner.

Let’s get into the goodness of the pumpkin protein cookie cake first.

Ingredients:

  • 1/3 cup pumpkin
  • 1.5 tablespoons coconut flour
  • 1 tablespoon protein powder (i used cookies n cream flavor)
  • 1/8 cup oats
  • 1 egg white
  • 2-3 tablespoons non-dairy milk (i used vanilla soymilk)
  • 1/8 teaspoon baking powder
  • cinnamon, splenda, pumpkin pie spice

Mix all together and microwave for 4-5 minutes. It will be more like a cake I guess rather than a cookie, but more dense than a cake. For the banana soft serve, I threw the following in my Ninja:

  • About 1.5 bananas worth of frozen banana chunks
  • 2-3 ice cubes
  • Splashes of unsweetened vanilla almond milk
  • 1 packet Splenda
  • Xantham Gum (for added thickness- this is optional)

I didn’t measure the almond milk because this was my first time making this. I probably added about 1/4 cup at first and started to blend, then kept adding a little bit more to get the desired consistency. It will take a few times of blending, lifting the lid and spooning a little around (and tasting 🙂 ) to figure out how you want it to be. But the outcome was amazing. It tasted just like banana ice cream/froyo but knowing that it was literally just made of bananas and a little bit of almond milk made it that much better. In a big bowl with my pumpkin protein cookie cake, topped with some Kashi cereal for crunch and a big scoop of Better’n Peanut Butter. Oh and a little bit of vanilla almond butter. I sneezed my way through eating this, but it was totally worth it.

I cannot stop reading old posts from one of my newest favorite blogs, STUFT Mama! I’ve been Instagram-ing when I make her pumpkin protein cookie dough, and that sparked my desire to turn it into a cookie cake last night. Her recipes and food in general are exactly what I love to eat, so her blog is a must read. She makes me want to have cute little babies just to make them delicious, fun and healthy food and take them running in a stroller! Okay, we won’t get ahead of ourselves here, but her blog is amazing. She is hilarious and real, so go read it 🙂

I will spend the rest of my day off sick and in bed, and bummed that I haven’t been able to work out since Sunday. It’s only Tuesday, I know, and I know I could have pushed it and tried to spin last night, but I think rest is more important while sick. I mean getting sick is a sign that our bodies need rest and to be taken care of better, right? I will keep telling myself that while I cough and sneeze all over my laptop. Beautiful.

Food Rut

Food is one thing I do not get bored with. I eat protein oats (sometimes made into pancakes) with a banana and peanut butter every morning except Sundays (my bagel day) and look forward to it all of those days. Give me greens, sweet potatoes, goat or feta cheese, fish or chicken and some mustard and I can create lunch and dinner. Greek yogurt, apples, protein bars, nuts, veggies and hummus more than satisfy me for snacks. So even though my ingredients don’t often change, I love my eats and find someway to spruce them up here and there. You may call it a food rut, but I call it food happiness. I am obsessed with vegetables.

Lunch yesterday:

Beets, feta, egg white, red pepper
Chicken, mushrooms, spinach, sweet potato & mustard
Starbucks Americano (perfection) & Kind bar for snack

My dinner last night was epic. I had John grill me a fillet of ahi tuna before I got home and I loved how it was really plain tasting but also really delicious. I piled it on spinach, sweet potato, goat cheese, garlic powder & a lovely little dressing I whipped up.

Balsamic vinegar, whole grain dijon mustard, spoonful of honey. Breathtaking.

I sliced up some cucumber and put the  rest of the ahi tuna pieces on top with some balsamic. To me, it looks like little pieces of sushi and I felt like a chef. To you, it probably looks like tuna on cucumbers with balsamic dumped on a plate. Agree to disagree.

This is why I someday want to work with people trying to live a healthy lifestyle. Had I known I could create delicious, filling, healthy meals like this? I would have given up McDonald’s long before 2 years ago. Healthy eating is DELISH.

I also came home to a friendly little package from Brooks Run Happy University.

Bag, Running fuel (which I have yet to use!), ear buds, and chafing prevention tools. I also have never had chafing, so i must be a beginning runner? Anyways, this made me super happy after (another) stressful day. I only have one pair of Brooks and they are pretty hardcore. I get compliments on them everywhere. They are downright badass.

I’m still getting used to them as they are very minimalist and I feel my shins and calves working super hard when I run in them. But leopard print sneakers that also say speed demon on them? I’m a badass.

After dinner, John and I went to the laundry mat. It was a wild hump day. Ahi tuna and laundry. We are still in our honeymoon face, obviously 😉 When we got back, it had been a whole 2 hours since I ate so bedtime food was needed. I have no shame in how much I can wolf down.

Into my new GNC blender/juicer combo (AMAZING BLACK FRIDAY DEAL!) went:

– 1/2 cup pumpkin

– 1/2 banana

– 1 cup unsweetened vanilla almond milk

– 1/2 scoop banana protein powder

– cinnamon & pumpkin pie spice

– ice cubes

Topped with… peanut butter. Yum yum yum. Pretty stoked that I have a blender that can blend ice now. I can’t wait to try out the juicer part!

I just really like routine, even when it comes to food. I won’t eat a bagel or even crave one unless it’s a Sunday. Weirdo.

weekend re-cap

Happy (belated) Halloween! I dressed up as Rachel Zoe for work yesterday & for Caitlin’s party Saturday. I didn’t have to spend a dime since fur vests and huge sunglasses are staples in my wardrobe 🙂 This weekend was fun and a little bizarre to have a snow storm in October! Back track to Friday… I’ll let the pics do the talking!

It was a pretty wild (and indulgent!) Friday night and we were in bed by 11. We slept until noon Saturday which I haven’t done in years, and woke up to a white out snow storm! I love snow especially now that I don’t have to drive in it. I walked to the grocery store to get breakfast ingredients which included eggs, fat-free reddi whip, pumpkin and LIFE CEREAL! It’s one of my favorites, it was on sale and I haven’t had it in at least a year (name brand cereal is very expensive in nyc!). I made John whole wheat french toast and some pumpkin oatmeal protein pancakes with warm diced apples for me 🙂

We watched a marathon of Arrested Development and spent the whole day cuddling while it snowed 🙂 You can work up quite the appetite being lazy, so I had a huge bowl of Life cereal with a banana and peanut butter.

Slept some more, then got ready to head to Caitlin’s halloween party! She had an amazing spread of mini carrot cake cupcakes, chips, hummus & veggies and CAKE POPS DIPPED IN PEANUT BUTTER CHIPS!

We drank lots of wine and decided not to go out in the snow storm. John and I picked up a piece of pizza on the way home thanks to the alcohol, and it was amazing! Not for my waistline, but whatever.

I slept a whopping 3 hours before I was wide awake and watched Fashion Hunters on Bravo… Love that show! I decided to get grocery shopping out of the way and walk off some of the alcohol. I got off at 116th st and on my walk got invited to breakfast with Caitlin and her friends, so I went on down to 51st and had a delish $3.50 breakfast at Galaxy. I had egg whites, 7 grain toast & potatoes. Aka perfect hangover food!

I spent the rest of Sunday walking around the Upper West Side and ended the day with a coffee date with John at Bourbon Coffee on 14th Street. If you live in NYC or visit, try to go there. They made my pumpkin spice latte with REAL pumpkin instead of gross sugary syrup! They also have the most amazing dessert called a “Jedhi bar” which is a layered cookie bar of graham cracker, dark chocolate, coconut and coffee/cocoa powder. We get it every time and share it. My phone had died at this point since I walked all day, so no pic.

Yesterday morning I woke up feeling super stuffy, so I made a big green monster smoothie with some egg whites for breakfast.

Due to the snow storm Saturday, the power, internet and HEAT was out at work. Apparently Jersey got a lot more snow than NYC. Yet we still stayed doing absolutely nothing for 7 hours. Luckily I had snacks but I wasn’t able to eat my oatmeal for lunch because we had no hot water or microwave. I had a big apple with peanut butter, and a greek yogurt mixed with PB2, fiber 1, a banana and peanut butter. AKA not enough food for me.

We ended up finally leaving at 4 instead of 6, and Caitlin and I had BIG plans of hitting the gym… but our growling stomachs got the best of us. Not to mention we’re both fighting a cold courtesy of hangovers and freezing cold temperatures. We were starving for chinese, so we found a place in her neighborhood for some take out and headed back to her place to watch Sex and the City and chow. I learned my lesson with the fried chinese I had upstate, so I got steamed chicken with steamed broccoli with absolutely no oil, and a side of steamed vegetables.

It was so good and now I know I can eat chinese and have it be healthy! We also indulged in some dark chocolate since it was Halloween and all. We went walking around her neighborhood and I continued on a stroll up the Upper West Side and got to enjoy some costumes. I walked a lot Sunday and Monday but it was my only real exercise. Obviously this weekend was super indulgent and void of vegetables, so I was happy to hop back on the running train this morning!

Sorry for the crazy long post, I have to stop being so busy shoveling food in my mouth on weekends and make time to blog! 😉

Had an amazing, relaxing weekend with my AMAZING family upstate! I am so beyond blessed to have the family that I have. They do not make it easy to leave, even after 6 months of living in NYC. They also do not make it easy to button my skinny jeans as they love to stuff me with food 😉 Here’s the weekend re-cap in pictures:

Everything about this weekend was so fall… except for the weather, it was unusually hot for this time of year. It felt SO great to indulge and eat delicious food with the people I love the most. My family brings out my best, and reminds me to stay true to yourself. I miss them already!
